How To Make Banana Lassi?

Lassi is an Indian yoghurt drink or some of us might want to call it a smoothie. The most common lassi is the mango lassi but this time around I made one with bananas instead. I do think that you can throw in pretty much any type of fruits of your liking to make a really delicious lassi drink. So how do you make banana lassi?

Lassi drink is super simple to make. All you ever need to make a banana lassi are these :

Banana Lassi Recipe ( for 1 serving / 1 glass)

- A blender

- Fruit of choice - 1 Banana, Mangoes, Strawberries or any type of fruits at all ( cut or diced these fruits so that it blends easily in the blender)

- Yoghurt - about 4 big tablespoons, it can be more so it's up to you

- Honey (optional) - I happened to have a jar of Manuka Honey laying around so I drop about 1 teaspoon of it into the blender

- Some ice cubes (optional)

Instructions :

Simply throw the diced up banana, yoghurt, honey and ice cubes into the blender, blend well and it's good to drink!

Some recipes do add in some milk, cardamom powder and even vanilla pod into their lassi minus the ice and honey. Hence it goes to show that you can have it however that you like to have in your lassi. Either way as long as you have the yoghurt and fruit combination, that should be a lassi drink alright.

In addition, this banana lassi or any lassi is best served cold and it can be a great drink to have during a hot summer day. There you go a perfectly easy Banana Lassi recipe that you can make at home on your own. I still wonder though, why in the world they always charge so much for a big glass of lassi in the restaurant. How to make your own paneer (home made cheese) at home?

A couple of years back, I was introduced into a really lovely, delicious North Indian cuisine which is the palak paneer. Palak paneer is a totally vegetarian dish consisting of spinach and paneer ( home made cheese) cooked into a curry. The one I used to have was really good especially for a first timer palak paneer eater. Haha.

Come to think of it, you can never actually imagine having to eat cheese with curry but trust me, the combination of the home made paneer works absolutely great with a rich in spice Indian curry. The paneer in the curry taste something like a combination of a chewy tofu but of course it tastes more rich because it is cheese and it comes from milk.

So I am going to share with you on how you can make your own paneer (home made cheese) all by yourself at home. Just so you know, paneer is a home made cheese and I don't think you can actually go out and buy one in the store.

Anyway here goes the paneer ( home made cheese) recipe:

Ingredients:

- Optionally you can flavour your paneer with bay leaves or rosemary ( or any type of herbs of your choice)

- 8 full cup of full cream milk, 1/4 cup of lemon juice

Methods:

- Simmer the milk

- Then add the lemon juice

- Stir the milk until it starts to curdle

-With a muslin cloth, pour the curdled milk over the muslin to separate the remaining water (whey) from the curdle.

- Tie a knot at the end of the muslin with the curdle wrapped inside and hang to dry

- The remaining water left after the separation is called as whey. You can still make use of the whey for some other dishes which I am not particularly sure what dish that will be. Haha.

- Leave the wrapped up curdle of milk to dry and then press with a plate overnight and store in the fridge.

- The paneer will be reading for cooking the next day.

Spice of India I

Since today marks the celebration of Deepavali or Diwali for Hindus around the world, I'm going to share with you readers on my list of favourites Indian culinary delights. My introduction into Indian cuisine started since young because being the true Malaysian I am, hehe, my closest friends have always been Indians and I remember having lunches, dinner parties and of course Diwali open house lunches over at my their homes. Nothing gets better from anything home made. My Indian cuisine experience has been even more delightful recently with a little help from my short stay over in India last year.

Mutton Curry : Success Story!





Woot, Adliana!!! Your awesome curry recipe is the bomb girl!!! I tried making the curry this time using mutton. Fresh Australian mutton from Tesco. Haha. From all my previous attempts making my own style of curry which obviously was lacking in vital curry ingredients, I'm proud to announce that my mutton curry kicks ass! Haha!

What's really great about mutton is mainly the fat in the meat itself. I never bother to de-fat the meat because fat brings flavour people! Everything in measurement and timing was just perfect this time. I didn't overdo on the coconut milk either, meaning it's still an okay , eatable, non-uber fatty doze of coconut milk. And yeah, the mutton's fat really helps to give that extra goaty flavour in the curry. Simply imagine, the melting fat oozes and blend into the curry mix. Super delicious.

Chicken Curry Home Recipe by Adliana

Chicken Curry

Ingredients:

Minced Red Onion
Minced Garlic
ginger + red onion + garlic (blend well in blender)
add the hot Malaysian curry powder in the blended mixture.

Things to fry first:

clove
star anise
cardammon
cinnamon
curry leaves
coconut powder (add to water to make a coconut milk)
dried tamarine
chicken or egg or beef - whatever main u want to cook. ( I usually cook chicken or egg)

Adliana's Cooking Step:

1) Put some oil in the pan, heat it up
2) Put in the things to fry first:
clove
star anise
cardammon
cinnamon
3) when the smells comes up, add in the minced red onion and also minced garlic
4) when the smells comes up or the minced onion and garlic seems cooked ( a little bit yellowish),
put in the blended mixture (ginger + red onion + garlic + hot malaysia curry powder)
5) add on the chicken/egg/beef and cook it with the blended mixture for abt 1 minute and
6) add on the coconut milk.
7) mix/stir the ingredients well
8) add the curry leaves and the dried tamarine and also some sugar and salt (not too much sugar tho)

And wallah,it's done!

Anyways, a huge thanks to Adliana for sharing her mum's curry recipe with me (I merely copy and pasted her notepad version into this post =).We were actually swapping recipes the other day. I gave her my Gourmet Burger recipe and that surely got both of us salivating! A two thumbs up for this recipe because it sounds so yummy!
